There’s a quiet intensity about Chef Evan Funke () that you don’t forget.
His presence is calm but deeply focused. He’s put in the 10,000 hours of rolling pasta (and many times over) and continues to approach his craft every day with discipline, care, and a deep respect for tradition and mentorship.
