How do you make really good French onion soup? Well, it starts from roasted beef bones and 6 days of stock making. Reduce to concentrate the stock till it’s beefy tasting. Cook 3 different kinds of onions, all cooked at different levels of carmelization to provide depth of texture, plenty of wine and real sherry, topped with house made baguette and imported gruyere cheese!
