Also did you know we officially make our own lox now!! Fresh whole salmon sourced from Hagens Fish Market weekly and prepped by our amazing Chef Matt!! Ever increasing costs pushed us off of our old lox fillets ($19.50/lb was our wholesale cost!!, yeesh!!) onto lox trim which was more affordable but just not quite right for us. Having someone with the knowledge of fish prep and lox making is a game changer!! Today will be our last day of lox trim. By tomorrow we will be fully into house made sliced lox fillets.
