These can be a difficult bake, and often are a bit leaden, with dense chewy dough, cloyingly sticky filling with so much cinnamon it blows out your palate, and thick icing. This version is pillowy light, with a well-balanced brown sugar cinnamon swirl, and a fluffy tart cream cheese icing. The whole thing is not-too-sweet and delicate texture.
