Lemon Butter Baked Cod
Ingredients:
24 ounces Sea Best Wild Caught Cod Fillets, thawed and cut into 4 equal 6-ounce portions
1 tablespoon Land O Lakes Unsalted Butter, melted
2 tablespoons fresh Sunkist lemon juice
1 teaspoon finely grated Sunkist lemon zest
2 Spice World fresh garlic cloves, minced
1 tablespoon Melissa’s fresh parsley, finely chopped, optional garnish
Instructions:
Preheat the oven to 400°F.
Lightly coat a 9-by-13-inch baking dish with cooking spray.
Pat the cod fillets dry and arrange them in the prepared dish.
Season evenly with ¼ teaspoon Diamond Crystal kosher salt and ¼ teaspoon McCormick ground black pepper.
Whisk the melted butter, lemon juice, lemon zest, and garlic together.
Spoon the lemon butter mixture evenly over the cod.
Bake for 10 to 14 minutes, until the thickest part reaches 145°F and the flesh is opaque and flakes gently with a fork.
Garnish with optional parsley and serve immediately.

Deliciously elegant caramel apple cheesecake in perfect portions – creamy, crunchy, and irresistible!
**Servings:** 12
**You’ll need:**
• 12-15 Pecan Sandies cookies (for crust)
• 16 oz cream cheese, softened
• ½ cup sugar
• 2 large eggs
• 1 tsp vanilla extract
• ½ cup sour cream
• 1 cup freeze-dried apples, crushed
• ½ cup caramel bits
• 1-2 tbsp flour (optional, for thickening)
• Extra caramel for topping
**How to make it:**
1. Preheat oven to 275°F. Line a muffin tin with liners and place a Pecan Sandies cookie in the bottom of each.
2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
3. Gently fold in crushed freeze-dried apples and caramel bits (add flour if the mixture seems too thin).
4. Fill each cup almost to the top with the batter.
5. Bake 22 minutes until set. Cool in the pan, then refrigerate.
