This dish is the one stuck in my mind. The one I want to continue to refine, perfect, simplify. Overall it’s a simple dish to cook, and an amazing dish to eat, but I want to make it better. The saffron, pistachio, orange zest, and butter will stay for sure, not sure about the roasted red peppers and arugula. I keep going back to beets and how they would be killer with this dish. Maybe roasted beets with a caramelized pistachio butter and toasted pistachios is the next rendition….

Got this beautiful beef shin from Bear Creek Farms and they cut it into the most magnificent example of a Thor’s Hammer for me. Coated it in brown rice koji to age for the next 5 days. Then it’s going to get introduced to saffron, citrus, and garlic….
