HUGE thanks to everyone who came out to support what us and what we're trying to bring to Charleston last weekend. We just had some time to go through pictures and wanted to drop some of our favorites. Thanks to all the chefs who came by to taste, say hey, and especially help us get cleaned up so we could get out the door. We're going to work hard to make sure we can get some better quality pictures for the next event, and possibly even a workflow video.
Keep your eyes peeled for the next one, and again, we can't thank you enough for the support! This is just the first in a long and continuous series of events, and we can't wait to show you what we have in store next!
HUGE thanks to Hernshaw Farms, Riffle Farms bison, our good friends at Johnnie's Fresh Meat Market for their patience and expertise in sausage making (literally couldn't have done it without them), Coco's Kitchen & Cafe for giving us a home for these dinners, and Charleston Bread for providing the beautiful baguettes we served with our hot charcute.

We're going to be revealing the menu course by course! First up is a tourtiere le canard - a rich and decadent hunter's pie, made with the highest quality duck breast, fresh herbs, and topped with shaved salt cured egg yolk. Keep your eyes peeled for the next three courses!

Nashville Hot Banh Mi
A little sweet. A little heat. This locally-sourced crispy fried chicken takes a brief bath in our signature spicy oil blend before being gently tucked into a toasted baguette dressed with charred collard green and green peppercorn aioli, then topped with a green tomato and dill pickle slaw.

Leftover green curry gravy from the pop-up Sunday, Thai jasmine rice, sauteed garlic, white onion, touch of lemongrass, and chilies, garlic and basil brat courtesy of Garrett France , and a couple of pickled chilies. Finally had time to make a plate for myself after a full week of prep and testing.
