What do you think - Should I post the Bourbon Bacon Ice Cream Sundae recipe... I'm torn...
Key Lime Pie
• 1 Recipe GF Graham Cracker Crust (store-bought variety)
• 2 12.3 ounce boxes extra firm silk tofu, drained (organic best)
• 1/4 cup fresh key lime juice (key west bottled works well too)
• 1 T. lime zest (optional)
• 3/4 cup organic white granulated sugar (Xylitol for a diabetic friendly and still delicious version)
• 1/4 t. salt
• 1 T. cornstarch (or waxy rice starch)
Preparation:
1. If mot usine a store crust, prepare the Graham Cracker Crust baking the crust in a 9" pie plate. Allow the crust to cool completely.
2. In a blender, combine the tofu, lime juice, zest (if using), sugar, salt and cornstarch. Process for several minutes, or until smooth and thick.
3. Pour into the prepared pie crust and place in the freezer for 2 hours, or until firm.
4. Serve from the freezer, garnishing with whipped cream and/or lime wedges if desired.
Bacon Fest was a grand success!! Bacon Bourbon Ice Cream w/ Cherries Jubilee on top.
