Sooooo easy to cook healthy - even for just one !!! 1 Boneless Chicken Breast sautéed in Olive oil/small amount of butter/ fresh garlic. Add 1 Vidalia onion sliced thin/ halved cherry tomatoes/ Mini Sweet red -orange- yellow peppers, sliced thin. Add some Sauvignon Blanc (happens to be what I am drinking- you can use chard.) Sprinkle Locatelli Cheese- Coarse Salt / crushed Black Pepper to taste. Serve over penne orrrr over Romaine Salad with green or black olives. Takes 10 minutes. Eat slowly - enjoy your wine & this beautiful Autumn weather 🍁🍁🍁❤️
