The Farm Stand Home Canned Tomato Basil Soup
Ingredients
* 4 qt. blanched, peeled, and quartered tomatoes
* 3 cups chopped onions
* 2 cups chopped celery
* 2 cups chopped red bell pepper
* 1½ cups chopped carrot
* Salt and pepper to taste
* 2 tsp. fresh snipped basil
* 1 bay leaf
* ¼ cup olive oil
Instructions
Place the tomatoes in a large pot and cook for 25 minutes. Transfer to a bowl.
In the tomato pot, add the olive oil and sauté all of the vegetables until soft. Add the cooked tomatoes and basil. Simmer for 20 minutes.
Run the mixture through a food mill and return the juice to the pot. Bring to a boil, then reduce to a simmer for 10–15 minutes. Season with salt and pepper to taste.
While the soup is simmering, prepare your jars, lids, and rings. Ladle the hot soup into sterilized jars and seal with lids. Process in a boiling water canner for 20 minutes.
Makes 7 pints.

Scalloped Cabbage
Ingredients
* 1 small to medium head cabbage, roughly chopped
* 1 sleeve (about 40) saltine crackers, crushed
* 12–14 slices American cheese
* Salt and pepper, to taste
* Milk
Directions
Preheat the oven to 350°F.
Bring a large pot of water to a boil. Add the chopped cabbage and cook until just tender, about 5 minutes. Drain well.
Spread a thin layer (about ⅛ to ¼ inch) of the crushed saltine crackers in the bottom of a 9x9-inch baking dish. Add a layer of the cooked cabbage and season with salt and pepper. Top with half of the American cheese slices.
Repeat the layers, ending with the remaining cheese. Sprinkle a few of the reserved cracker crumbs over the top.
Slowly pour milk around the edges of the baking dish until it reaches about 1 inch from the top of the dish.
Bake for 40–50 minutes, or until the casserole is hot and bubbly and the cheese on top is a deep golden brown. The darker the cheese becomes, the richer the flavor.

🚐 On the Road Again…
There sure are a lot of RVs on the highways today! It must be the height of vacation season. Families are headed to campgrounds, the lake, the mountains…making summer memories one mile at a time.
As for us…we’re on our last trek home. ❤️
This week has been filled with a different kind of journey. We were able to get Dave’s mom settled into skilled nursing, and she’s doing well. We packed up her home, donated the items she wanted to bless others with, and safely stored everything she’ll need when she moves into assisted living on August 1st.
It’s been emotional at times, but also rewarding. Sometimes love looks like lifting boxes, sorting memories, making hard decisions, and helping someone take the next step in life with dignity.
We’re tired…but grateful.
After making an over night stay with our Nebraska kids…now it’s time to point the car toward Illinois, grab another cup of coffee, and head home. There’s no place quite like it.
