Continuing my journey of switching to all fresh-milled flour for our family. For the pictured loaf I followed recipe. I used hard white wheat, Khorasan, a very small amount of Spelt, plus 1/2 t diastatic malted barley flour (helps with rise and crumb texture).
Never be afraid to step into new things when making better choices for your family. … it’s definitely worth the extra time effort and does takes commitment !!

I’m so excited that I’m learning how to work with sourdough! This loaf is 50% organic All Purpose flour and 50% fresh milled hard white wheat.
It’s taken some time to find a method that produces a light fluffy crumb and crispy crust. So delicious, satisfying and nutritious. We can’t get enough!

Feeling good about these cuties!! Someone, 😉 asked for smaller cinnamon rolls for sharing. This is the results.
