I made some Mathri. It’s a central Indian savory flaky biscuit. I watched my mother make it and now I’ve figured out how to bake it instead of frying it. Ingredients:
1.5 cups all purpose flour5 chickpea flour
1/4 baking powder
1/3 cup olive oil or ghee
Dry Fenugreek leaves, carom seeds, sesame seeds, turmeric powder, a bit of cayenne pepper, salt to taste and sometimes I put aesofetida
About 1/2 cup water
Mix it up to get a play dough consistency
Bake at 375F for about 15m till fenugreek gets real fragrant and the color of the cookie is the color of my skin…golden brown
