I don’t want you to miss out on the yummy bounty of summer veggies!
It’s true that raw veggies are cold in nature, and we don’t want them to be the main food source in seasons like fall and winter. But summer is the appropriate season to enjoy them, especially if you dress veggies like we do in Chinese cuisine - often adding garlic, herbs like cilantro, rice vinegar, and even ginger to balance the cold nature of veggies, making them much easier to digest without bloating.
I like to let my veggies sit and marinate for 5-10 minutes so they are basically “cooked” by the dressing. It doesn’t heat-treat the veggie, but turns it into a more digestible state. Think of it like “ceviche” for vegetables. Also, love pairing them with hot broths, even in summer.
