Ginger Root Catering/Gingerly Created

Serves 4 to 8 For the Chutney: 2 tablespoons lime juice 2 tablespoons raisins 1 green apple, peeled, cored and quartered 1/4 cup mint leaves 1 tablespoon fresh ginger 1 tablespoon lime zest 1/2 teaspoon sea salt For the Carrots: 3 tablespoons butter 6 carrots slice 1/4inch thick diagonally Soak raisins in lime juice for 30 minutes place raisins, apple, mint, ginger, lime zest, and salt in a food processor, or chopper, and pulse to chop. In a saute pan melt butter over medium heat, add carrots reduce heat to low and saute stirring occasionally until carrots are soft and browned around the edges. Stir in apple chutney and saute for 5 minutes.
