City Sappers Pure Maple Syrup

Sugar making is a social thing, always more fun when friends stop by to hang out, can’t beat the 60 degree evening, and a bit of bourbon with fresh syrup. Just missing Borowski.

Damp but nice warm day, no sap flowing today. Had a good run this week, collected about 175 gallons off of 40 taps. Stored sap will spoil fast at this temperature unless it’s on ice/refrigerated so I’ve got about 100 gallons to boil, should be done by early afternoon then relax for a couple days until it cools off and starts to flow again.
