Who says cherries are only for desserts?!
For National Cherry Day, we're sharing this Cast Iron Chicken with Cherries recipe featuring our pasture-raised chicken thighs. Give it a try this week!

Cast Iron Chicken & Cherries 🍗🍒

6 chicken thighs, skin on/bone in (1 1/2 packages)
1 T oil
1 T butter
⅔ cup small dice red onion
2 T minced garlic
1 cup rose/sherry
⅔ cup chicken broth
⅔ cup heavy cream
1 T dried rosemary or thyme
1 1/2 cups fresh cherries, pitted and sliced in half
2 T honey
1 T balsamic vinegar (or glaze)
Coarse salt and pepper to taste

Season thighs with salt and pepper. Heat a large cast iron skillet over medium heat, add oil and butter. Once heated, add chicken thighs skin side down (in a single layer, not crowded). Cook over medium-high heat for 5-7 minutes until golden and crispy. Turn the thighs so that they're skin side up and arrange evenly in the pan. Turn heat to medium-low and add onions to skillet in between thighs; sauté for 3-5 minutes until translucent. Add garlic and cook for another 1-2 minutes. Pour in rose/sherry and let lightly simmer and reduce, approximately 10 minutes.

Heat oven to 350. Combine honey and balsamic and toss with cherries. Place cherries on a cookie sheet and put in the oven for ~15 minutes.

Add chicken stock to skillet and let reduce to thicken, add heavy cream and reduce to thicken. Add salt and pepper to taste. Off heat, layer in fresh baked cherries (fun to put fresh sprigs of rosemary to serve!). Enjoy!
