Simple veggie kothu parotta :

1. Use freshly prepared parotta
2. Cut parotta into pieces
3. chop 1 onion and 1 tomato into small pieces
4. Heat the pan, Add 3 spoons of oil, add cumin and mustard to temper.
5. Add chopped onion, asafetida, 2 chopped green chillis, curry leaves. Fill onion till it turns red.
6. Add chopped tomato, pinch of turmeric, salt to taste, 1/2 spoon of red chili powder, 1/2 spoon of garam masala, pinch of fennel power and coriander powder.
7. Add 1/2 spoon of ginger - garlic paste.
8. Add chopped parotta to the mix and fry.
9. Turn it off once masala gets blended to parotta and it is cooked well.
10. Yummy kothu parotta is ready to serve.
