Last week I was in Louisiana for a conference (for my day job), and toured a tiny perique to***co farm run by a father and son. Rarest variety in the world. The process is wholly manual and takes 18 months to go from seed to shipment. Then it heads to South Carolina in used whiskey barrels from Tennessee to be blended with other varieties grown in Virginia and North Carolina.
