Grilled summer salad 🌿

Ingredients:
-3 zucchini and/or summer squash halved or sliced lengthwise
-1/2 red onion sliced
-2 tbsp of olive oil
-salt
-fresh herbs (I used mint, basil and parsley)
-2 tbsp of feta cheese crumbled

Mix the zucchini and summer squash slices with the onion, olive oil and salt. Grill for 10 minutes turning in between until nicely grilled. Mix with the fresh herbs and cheese.

Muslos de pollo al horno 🍗🌿

Ingredientes:
-4 muslos de pollo sin piel
-2 cucharadas de aceite de oliva
-2 cucharadas de tomillo fresco picado finamente
-2 cucharadas de perejil fresco picado finamente
-1/2 pimiento rojo picado finamente
-sal con ajo y pimienta para sazonar

Instrucciones:
Precalentar el horno a 400°F (200°c).
Forrar una hoja para hornear con papel aluminio o papel para horno. En un bowl mediano agregar los muslos, aceite, sal con ajo y pimienta, hierbas aromáticas y pimiento. Mezclar bien y alinear los muslos en la hoja para hornear. Agregar encima lo que queda en el bowl al sacar el pollo. Hornear por 30 minutos. Acompañar con ensalada o vegetales al v***r.

Estos muslitos son súper fáciles y deliciosos de preparar! Recomendable usar hierbas frescas.

Baked eggs with basil & bacon 🥓🌿

Ingredients:
-4 eggs
-4 tbsp of heavy cream
-salt & pepper
-basil leaves
-cooked bacon (optional)

Instructions:
Preheat oven to 425°F. Boil 2 cups of water (it can be less or more).
Spray the cocottes with oil. Add 2 tbsp of heavy cream per cocotte and 2 eggs. Season with some salt & pepper and add some basil leaves. Add the cocottes to where You are going to bake them, I used a loaf pan. Add the boiling water to the bottom (I added the water first but You can do either).
Cover with tin foil and cook for 10 to 12 minutes. You can add some bacon, more herbs and even cheese on top. I like it only with herbs but my husband loves his bacon.
