Buckwheat is an ancient pseudo-grain which is gluten-free and loaded with antioxidants and flavonoids such as quercetin and rutin. A new study has found that women eating more than 3 servings weekly of cabbage or sauerkraut had a stunning 63% reduced risk for breast cancer. But crucially, it had to be or short-cooked. Cancer risk was not reduced when this vegetable was long-cooked. That’s because cooking destroys the enzyme (myrosinase) that is needed to activate the key fighting compounds in cabbage which are indole-3-carbinol and isothiocyanates. The same is true for all broccoli family vegetables. Raw and sauerkraut are also a great sources of vitamins C, K, B6, B9, potassium and dietary fiber—all for just 25 calories per delicious serving.
