Summer's bounty keeps rolling into our kitchen. This week we feature local eggplant for the first time this season, in our Creamy Polenta Casserole with Ratatouille. The polenta is slow-cooked with Straus grassfed milk and butter, then layered with a rich saute of eggplant, sweet peppers, summer squash, tomato and fresh basil.
We have three more seasonal debuts line up this week. Chicken Meatballs with Cacciatore Sauce features roasted meatballs made with ground Mary's Organic chicken, in a broth-based tomato sauce with sweet peppers, mushrooms, roasted Early Girl tomatoes and plenty of luscious Seka Hills olive oil from the Capay Valley.
Pork Mole Verde with White Beans stars pasture-raised pork from Marin Sun Farms, dry-brined for two days, braised overnight with our Pork Trotter Bone Broth, combined the next day with Navy beans also cooked in bone broth, and simmered in a bright, herbaceous "salsa" of pureed roasted tomatillos, poblano chiles, garlic, lime and cilantro.
Local pickling cucumbers are just coming into season, too, and this week we've got our first batch of Bread & Butter pickles in the jar, sweetened with raw local honey instead of sugar, and pickled with live-culture apple cider vinegar. Keep an eye out for our classic Lower Eastside Dill Pickles, coming soon!

Our vegan White Bean and Asparagus Soup starts with a housemade vegetable broth and is finished with lemon and fresh herbs. We also have vegan Creamy Mushroom Soup and Three Sisters Vegan Chili with local Summer Squash, Butter Beans (from Iacopi Farm in Half Moon Bay) and Heirloom Posole (courtesy of our friends at Alma Semillera, who are dedicated to preserving indigenous foodways).
On the meaty side, there's our classic Curried Chicken Salad, Chicken Vegetable Soup with Fresh Herbs, Cock-a-Leekie Soup with Rice, Black Bean Chili with Ground Beef, a smokey Mushroom Sausage and Cabbage Soup, and our Thai Infused Chicken Broth with Coconut Milk (Tom Kha).
