The name comes from Korean culinary tradition, where dishes are often named after the main ingredient and cooking style rather than the exact heat level. The dish most people know as Spicy Pork is Jeyuk-bokkeum — “jeyuk” means pork, and “bokkeum” means stir-fried.
Its signature flavor comes from a chili-based marinade made with Korean chili paste and chili flakes, which historically made it a “spicy” preparation compared with non-spicy pork dishes. But in Korean cuisine, “spicy” can mean much more than heat alone — it’s often about flavor balance. Sweet, savory, smoky, rich, and just the right kick can all come together in one dish.
