Love drinking aged NV Champagnes to experience secondary flavors as time works it's magic. Always fun to see how they hold up and evolve when you know they have been impeccable stored from release. 😉 This wonderful bottle of Perrier-Jouet Grand Brut was disgorged on the 39th day of 2012 (February 8th). Special Guest Mark Newton (owner/winemaker) from DiStefano Winery shared a '91-'95 Cabernet Sauvignon vertical. A great showing for aged WA wine. The '91 was a particular standout for the night.
