Ingredients
1 tsp white peppercorns
4 cloves garlic
2 tablespoons chopped ginger (~1-inch piece)
250g napa cabbage (~3.5 cups chopped)
½ tsp table salt

1 lb ground pork (80% lean or ground pork shoulder)
1 lb napa cabbage (finely minced)
1 tsp white pepper
1 tbsp kosher salt (to draw out moisture from the cabbage)
1 tsp kosher salt

Age Gyoza (deep fried)
Age gyoza are crispy, deep fried gyoza mainly found at Chinese and gyoza specialty restaurants, but rarely encountered elsewhere.

2 packages of gyoza wrappers (approx. 96 wrappers)
1 small bowl of water (for sealing gyoza together)

1 lb. ground chicken
6 large raw shrimp, diced

1 clove garlic, chopped
¼ cup chopped carrot
½ pound ground pork
1 egg
1 tablespoon vegetable oil
1 (10 ounce) package wonton wrappers
¼ cup water
¼ cup soy sauce
2 tablespoons rice vinegar
