RECIPE:
POTATOES 🥔
- Slice baby potatoes in half and boil
- Toss with olive oil + lemon dijon blend
- Roast until crispy

YOGURT SAUCE 🍋
- Mix greek yogurt + lemon dijon blend + EVOO + splash of vinegar

TOPPINGS 🌱
- fresh dill
- lemon zest
- pickled red onions

This one fed me all week long — mostly scooped onto tortilla chips.

THE SALAD: 7.5/10 — flavorful, nourishing, and kept me full for hours. I ate every note and it stayed good for about 5 days! Only complaint? A little mooshy (hence the chips). Next time I’m adding celery for crunch.
