There’s been a lot of confusion around the new Texas food truck rules.
Yes, the law changes the commissary requirement starting July 1, 2026. But it does not mean every food truck can automatically operate without one. The exemption appears to apply only to operators who are fully self-contained and can properly handle things like waste disposal and documentation.
So if your truck still depends on prep space, refrigeration, storage, or equipment off-vehicle, this still matters. In many cases, a commissary is still part of the equation operationally, even if the rule is changing.
If you run a food truck in Texas, the takeaway is simple: don’t assume the requirement disappeared. Check whether your setup actually qualifies.
