Smoky Eggplant and Lentil Stew
Ingredients:
1 large eggplant (roasted)
1 cup brown lentils (cooked)
1 medium onion, chopped
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp cumin
Β½ tsp turmeric
2 medium tomatoes, diced
3 cups vegetable broth
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Roast the eggplant over an open flame or in the oven until the skin is charred and the flesh is soft. Peel, mash, and set aside.
In a large pot, heat olive oil. SautΓ© onion until soft, then add garlic, cumin, turmeric, and paprika.
Stir in diced tomatoes and cook until they break down.
Add the mashed eggplant and cooked lentils. Mix well.
Pour in the vegetable broth. Simmer for 20β25 minutes until flavors meld.
Season with salt and pepper. Garnish with chopped parsley.

Beef and Sweet Potato Stir-Fry

Ingredients:
300g beef strips (sirloin or flank steak)
1 large sweet potato, peeled and thinly sliced
1 bell pepper, sliced
1 onion, sliced
2 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 tablespoon vegetable oil
Salt and pepper to taste
Optional: sesame seeds and green onions for garnish
Instructions:
Prepare the sweet potatoes: Lightly steam or microwave the sweet potato slices for 3β4 minutes until slightly tender but not mushy.
Sear the beef: In a hot pan, add vegetable oil and quickly stir-fry the beef strips until browned. Remove and set aside.
Stir-fry veggies: In the same pan, add onion, garlic, and bell pepper. Stir-fry for 2 minutes.
Add sweet potatoes: Toss in the sweet potato slices and cook until they start to caramelize.
Combine and sauce: Return the beef to the pan, pour in soy sauce, oyster sauce, and sesame oil. Stir everything together for 1β2 minutes.
Serve: Sprinkle with sesame seeds and chopped green onions if desired. Serve hot over rice or noodles!
