Wednesday's Wecipe is how to make a good crêpe! Hint: You have to have a good pan to start with! Not too big, or the crêpes will break!
For two people to enjoy 2 savory ham and cheese (gruyère of course!) and 2 sweet crêpes each... (Nutella or Sugar):
1 C of flour
1 1/4 cups milk
1/4 tsp salt
3 eggs
2 T oil or melted butter
Combine everything in a blender. Scrape down the sides and blend again. The batter should be smooth and the consistency of heavy cream. Let rest for an hour. (Any longer, the batter should be refrigerated).
Heat a crêpe pan or medium sized frying pan to medium high heat and brush with a little oil. Pour 2-3 T of batter into the pan, and quickly swirl it around to coat the bottom evenly. It's not a pancake! Not too thick! When the crêpe is brown on one side, flip it and cook it on the other side. Add your savory filling now (ham and cheese), and roll it up or fold it, and put it on your plate!
Serve with a green salad or an endive salad like the one I made! Delicious! :) Bon appétit! And yes, you can triple this recipe if you LOOOOVE crêpes or have lots of people to serve!
