Ok this chicken was out of this world. Swipe to see what went into the marinade: olive oil, freshly picked rosemary, oregano, thyme, lemon peel, dried chili, garlic, and salt. Chop together finely and toss into the chicken (with the oil) to marinate. And if you really want succulent chicken, add a teaspoon of mayonnaise to the blend.

It smelled heavenly in my home; my love affair with fresh herbs is only just beginning.

Paired with roasted potatoes, a Greek yogurt chive dip, and lemony-ghee roasted broccoli. I added them all to the baking sheet at different times and only had one dish to clean in the end. I usually judge sheet pan meals but damn. Sometimes with a little creativity (and a small Pyrex), dreams really do come true.

What can I say? Oatmeal for breakfast has been good to me.

So has:
- more walks
- more audiobooks
- bitter melon supplements
- no more high intensity workouts
- more fruit
- more tea
- more massages
- less drama
- more love
- more family

But most of all:
- more community care

If you put a pack of frozen chicken thighs from costco, 1 teaspoon of minced garlic, 1/2 teaspoon of cumin, a can of chipotle peppers in adobo, a splash of chicken broth, and salt to taste in an instant pot for 30 minutes and then on sauté mode for another 15 minutes with the top open for the sauce to thicken, you will end up with the simplest, yummiest meal prep chicken ever. Shred it to your liking and serve as you please.

Pair it with hearty, cooked down greens, and it’s a healthy meal too. 😏
