Légumes Rôtis Rustiques au Four avec des Haricots Cannellini
Ingrédients :
2 tasses (cups) de haricots Cannellini (cuits et rincés)
Assortiment de légumes rustiques (carottes, poivrons, courgettes, choux de Bruxelles, petites pommes de terre)
3 cuillères à soupe d'huile d'olive
4 gousses d'ail, pelées et entières
1 cuillère à soupe de romarin frais, haché
1 cuillère à soupe de thym frais, haché
Sel et poivre noir, au goût
Un filet de bouillon de légumes (optionnel)
Jus de citron frais, pour servir
Étapes :
Préchauffez le four à 200°C (400°F).
Préparez et coupez les légumes en morceaux uniformes.
Sur une plaque de cuisson, mélangez les légumes, l'ail, le romarin et le thym avec l'huile d'olive. Assaisonnez de sel et poivre.
Étalez en une seule couche. Rôtissez pendant 20 minutes.
Ajoutez les haricots Cannellini à la plaque et mélangez délicatement. Ajoutez le bouillon si vous le souhaitez.
Remettez au four et rôtissez pendant encore 15-20 minutes, jusqu'à ce que les légumes soient tendres et dorés.
Arrosez de jus de citron frais et servez chaud. Bon Appétit !

Twice-Baked Cranberry Sweet Potatoes
Ingredients:
2 large sweet potatoes, scrubbed
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
1 cup crème fraîche (or heavy cream)
1/2 cup dried cranberries
1/2 cup chopped pecans
1 teaspoon Herbes de Provence
Salt and black pepper to taste
Fresh chopped parsley (optional, for garnish)
Directions:
Preheat your oven to 200°C (400°F). Cut the sweet potatoes in half lengthwise and rub them all over with olive oil.
Season with salt and pepper, then bake for 40-50 minutes, or until completely tender.
Remove from the oven and let them cool slightly. Scoop out the flesh into a bowl, making sure to leave a thin, half-inch shell intact.
In the bowl, mash and mix the sweet potato flesh with the butter, minced garlic, crème fraîche, dried cranberries, and Herbes de Provence.
Fold in the chopped pecans. Spoon the creamy mixture generously back into the sweet potato shells. Bake for another 10-15 minutes until the tops are golden and slightly toasted. Enjoy!

1. Mediterranean Lemon Chicken Pita Wraps
Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
1/4 cup fresh lemon juice
1/4 cup olive oil
4 garlic cloves, minced
2 teaspoons dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
4-6 pita breads or pockets
1/2 cup hummus (plain or lemon)
1/2 cup tzatziki sauce
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 cup crumbled feta cheese
1/4 cup red onion, sliced (optional)
Directions:
In a bowl, combine lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper. Add chicken and marinate for 30 minutes.
Sauté or grill chicken strips until golden brown and cooked through (about 6-8 minutes).
Warm the pita breads slightly in a skillet or microwave.

Ingredients:
2 large boneless, skinless chicken breasts
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and black pepper to taste
Fresh chopped parsley (optional)
Directions:
Prep the Chicken: Slice the chicken breasts in half lengthwise to make 4 thin cutlets. Season both sides with salt, pepper, and Italian seasoning.
Sear: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through (about 3-5 minutes per side, depending on thickness). Remove the chicken from the skillet and set aside on a plate.
