We ended up trying two of the recipes with our child, who responded about the Maple Glazed Carrot Medallions, “if you made carrots like this all the time, I would eat them all.” I put the leftovers in his lunch the next day, and not a single piece came back home.

Stuffed Baked Sweet Potato with Crispy Seasoned Lentils. Topped with dressed arugula, avocado, pickled red onions, and a dollop of cottage cheese (sprinkled with a little everything bagel seasoning), all drizzled with hot honey. So GOOD!!
