Perfectly Seared Filet Mignon Recipe
Ingredients:
2 (6-8 oz) filet mignon steaks
1 tbsp olive oil
2 tbsp unsalted butter
3 garlic cloves (smashed)
3 sprigs fresh thyme (or rosemary)
Salt and pepper to taste
Instructions:
Remove steaks from the fridge 30 minutes before cooking to reach room temperature. Pat dry and season generously with salt and pepper.
Heat olive oil in a cast-iron skillet over high heat until shimmering.
Add steaks to the skillet and sear for 2-3 minutes per side until a golden crust forms.
Lower heat to medium. Add butter, garlic, and thyme to the pan. Tilt the skillet and spoon the melted butter over the steaks for 1-2 minutes.
Transfer skillet to a preheated oven at 400°F (200°C) and cook for 5-7 minutes for medium-rare.
Let steaks rest for 5 minutes before serving.
