Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/4 cup light brown sugar
1/2 cup (1 stick) salted butter, melted
For the Filling:
1 cup cold heavy cream
1 tsp vanilla extract
16 oz cream cheese, softened
1/2 cup granulated sugar
1/2 cup powdered sugar
1 tsp lemon zest
2 tbsp fresh lemon juice
1 (3 oz) box strawberry gelatin
1/2 cup boiling water
1 cup finely chopped fresh strawberries
Instructions:
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs and brown sugar. Add the melted butter and stir until well mixed.
Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while you make the filling.
Whip the Cream:
In a chilled bowl, beat the cold heavy cream and vanilla extract until stiff peaks form. Set aside.
Make the Cheesecake Filling:

Ingredients:
2 cups graham cracker crumbs
1/2 cup melted butter
3 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
1/2 cup blueberry preserves
1 cup fresh blueberries
1 cup white chocolate, melted and cooled
Whipped cream for garnish
Fresh mint leaves for garnish
Directions:
Preheat oven to 325Β°F (160Β°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
In a large bowl, beat the cream cheese until smooth. Add granulated sugar and vanilla extract, and beat until combined.
Add the eggs one at a time, beating well after each addition. Stir in the sour cream and melted white chocolate until well incorporated.
Pour half of the cream cheese mixture over the crust in the springform pan. Spoon blueberry preserves over the cream cheese mixture and gently swirl with a knife to create a marbled effect. Pour the remaining cream cheese mixture on top and smooth the surface.
Bake for 50-60 minutes, or until the center is almost set. Turn off the oven and leave the cheesecake inside for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
