Chicken over rice is a staple around the world and this popular Hainanese dish is one of them. You can find many different versions from Thailand, Vietnam, Malaysia, and Singapore. My plate has fried and poached chicken over ginger rice, served with a fermented soy ginger sauce, cucumber, and a side of chicken soup with daikon radish and cilantro.

Ropa Vieja, or more specifically, Carne Desmechada is a Colombian shredded beef dish plated here with fried plantains, homemade arepas, and rice.
