Crafted with raw cow’s milk and aged for at least 9 months, this rare wheel is nurtured with a secret herbal brine known only to two people. The result? A complex, lingering flavor with delicate salt crystals and a creamy, rounded finish. Production is extremely limited — only select dairies in the tiny region between Alpstein and Lake Constance are allowed to make it. Every wheel carries its casein mark, a guarantee of authenticity and origin. We’re opening this special wheel on Saturday during our tasting, and trust us… you’ll want to be there for that first cut.
