Proven Pastry

Canelés have been giving me trouble for a few weeks, but today I made my best batch since moving to the new kitchen space .

I’m going more will turn out like this in my early morning bake for tomorrow.

I’ll also have an exciting new special: Chedder Habanero Jelly Danishes! Super cheesy, a little sweet, and just a tad spicy, these are a lot of fun! I’ll only have 30 of them, so don’t snooze!

Experimenting with some versions of a mini bake well tart. This has cranberry jam, hazelnut frangipane, and whole cranberries.

Pecan croissants will be back tomorrow morning! They’re just like an almond croissant, but so much tastier. Come grab one before they sell out :)
