I wanted to share my recipe for a homemade DAIRY FREE Pumpkin Spice coffee creamer!

This recipe can also be tweaked to fit your own taste preferences ☺️

1 can of coconut sweeten condensed milk
1 cup pumpkin puree (approx)
1 1/2 cup Almond milk (your choice milk)
1Tbs vanilla extract
1 Tbs cinnamon
Dash of ginger
Dash of nutmeg
Dash of ground cloves

•Mix all together, store in fridge •

When making your coffee add in your favorite protein powder for a special pumpkin spice protein coffee 🫶🏽

This weeks breakfast choice requested by the kiddos
💚💛Banana Zucchini Muffins 💚💛

Absolutely delicious, quick & easy to make for a fast breakfast grab!

✨Recipe ✨
1/2 cup room temperature butter
2 eggs
1/2 cup cane sugar
1 teaspoon vanilla extract
1 3/4 cup flour (UNBLEACHED UNENRICHED)
1 teaspoon baking soda
1/2 teaspoons baking soda (aluminum free)
1 teaspoon salt
1 cup grated zucchini
3 mashed bananas
(Optional toppings, chocolate chips , brown sugar)

Combine ingredients, add banana and zucchini last mix together then bake into muffins, mini muffins or even a loaf pan

Bake at 350 for 20 minutes for muffins , add 15-20mins if you bake it as a loaf
Check with toothpick to make sure it comes out clean

This also makes for a healthier dessert item 😉

Tips & tricks to save all the zucchini from your summer garden💚

I LOVE baking with zucchini, so to save all the zucchini’s we get from our garden for future baking here’s a tip to save all you can!

1.Shred your zucchini
2. Use 1/2 cup measuring cups to put zucchini into a cupcake pan
3. Put in freezer over night
4. Next day pull out, add into bags, label & freeze 😃
