Moist Coffee Cake
Melts-in-Your-Mouth Coffee Cake
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, softened
1 cup sour cream
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup chopped pecans or walnuts (optional)
Topping:
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, mix the flour, baking powder, baking soda, and salt.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and sour cream.
Gradually mix in the dry ingredients until just combined.
Pour half of the batter into the prepared cake pan and spread it evenly.
In a small bowl, mix together the topping ingredients: flour, brown sugar, ground cinnamon, and melted butter.
Sprinkle half of the topping mixture over the batter in the pan.
Spread the remaining batter over the topping and then sprinkle the rest of the topping mixture on top.
If desired, sprinkle the chopped pecans or walnuts over the top.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

1 cup old-fashioned oats
1/2 cup creamy peanut butter
1/3 cup honey
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 teaspoon vanilla extract
A pinch of salt (optional)
Directions:
In a large bowl, combine old-fashioned oats, creamy peanut butter, honey, ground flaxseed, mini chocolate chips, vanilla extract, and a pinch of salt if desired.
Mix the ingredients until well combined. If the mixture feels too sticky, you can refrigerate it for about 30 minutes to make it easier to handle.
Once chilled, use your hands to roll the mixture into bite-sized balls.
Place the peanut butter oatmeal balls on a parchment-lined tray and refrigerate for an additional 15-20 minutes to set.
