Mezcal Week

Let's talk what goes with mezcal, which we often respond, well everything! It sounds like a cop out but it is pretty true. With the variety of flavors found in any bottle of mezcal, it is truly versatile. It's often served with orange slices and sal de gusano, or roasted cacahuates.
But, it is a great digestivo, so if you are having a meal that is heavy, ie meat or mole, it does a great job in helping break down the fats. It also works well with seafood and fish, and even a cheese course. And of course, it is sublime with chocolate and other desserts.
It is really about experimenting to see exactly how flavors balance out. If you are having a spicy meal, you might not want to feature a "spicy" mezcal as the combined heat of flavors in the mouth can be pretty overwhelming. Fruitier mezcals work with cheese, pechugas are great with chocolate, and minerali Karwinskiis can taste great with sushi. Start playing around!
