2 ingredient Pancake for the no fuss Tongan man!

Ingredients (makes 4 medium pancakes)
2 eggs
1 medium ripe banana
A little flour (you might need a bit)

Step 1: Peel and mash the banana until it’s smooth.
Step 2: In a bowl, beat the 2 eggs.
Step 3:Combine the eegs and Banana, mixing well. If you find that the mixture is too thin/runny add a little flour to thicken it.
Step 4: Heat a pan and grease it with a teaspoon of oil or butter. Reduce the heat to low or else the pancake will burn easily.
Step 5: Pour a circle of the batter into the pan (about 2 tablespoons per pancake)Cook until for a minute.
Step 6: Lift the pancake a bit with a spatula or flat spoon to check if the underside is golden brown.
Step7: Then flip and cook the other side until it’s golden brown too.(another 30 seconds to a minute). The pancake is ready!!Extra Toppings:Sprinkle a little fresh grated coconut Chop some Paw Paw (papaya) or Siaina (banana) Write in and tell us how it went men of Tonga! Mo'ui Lelei, Mo'ui Fiefia !!
