Students who complete our Thai Masterclass come away with more than technique. They understand why red curry paste is the foundation of an entire family of Thai dishes. They know when to smell before they taste. They have felt the difference between a paste pounded by hand and one processed by machine — and they cannot unfeel it.

Day 1 is Thai curries. Day 2 is dressings and relishes. Day 3 is wok-fired dishes and soups. Every day is a deeper conversation with a cuisine that rewards patience, precision, and genuine curiosity.

At Bo.lan Educational Program, we believe that learning to pound is learning to understand Thai food at its most fundamental level. The rhythm of the granite, the wrist rotation that spreads ingredients across the bowl, the moment the paste becomes smooth and fragrant — these are techniques that a blender simply cannot teach.

In our Masterclass, students work with a traditional stone mortar to build red and green curry pastes from scratch, developing a depth of flavour that only comes from understanding the process, not just following a recipe.
