Giant sea perch is a type of fish that can live in both freshwater and saltwater. Normally, it's not commonly consumed raw due to the risk of parasites, as it's not farmed with strict control. However, this giant sea perch is prepared by Suisan by Kensaku.

- It undergoes ikejime and shinkejime processes.

- It's controlled for antibiotics.

- It has lower bacteria levels compared to standard.

- The salinity of the water it lives in is 25 ppm, which is safe for freshwater parasites and green algae that cause clay odor.

- It's controlled to be safe from the parasite Anisakis.

- It has a high intramuscular fat content of 9-10% for every piece.

- It's controlled for stress-related infections from birth to death.

- It's delivered in a well-controlled temperature box to prevent any post-harvest impacts.
