Hand-dived scallop from Hitra, Norway.
Butter-fried scallop with a raw core, topped with orange zest and finger lime. Served with Aloë’s XO-sauce and sauce Vin Jaune split with saffron oil. Accompanied by charred brown shimeji mushrooms!
