We cannot be part of and not have Pulpo, for which they are famous for. Believe it or not, this version is just as good. Octopus tentacles on the plancha, over a creamy cassava and cauliflower purée, and topped with a Peruvian chimichurri.

As always, a pisco sour on the side makes it even better.
