Especially with that butter.
It started with a question: what wine actually deserves a seat next to this dish?
So we sat down — our chef, our wine importer, and a bottle list way too long for one evening.
We tasted. Argued a little. Tasted again. Some pairings just didn’t make the cut — too bold, too quiet, just...
not it.
Then one bottle landed right. Balanced, unexpected, exactly what the dish needed.
That’s how it made it onto our new wine list.
