Okay guys and gals! I found a replacement for me when the rest of the family is having pizza. I’m just starting low carb in an effort to control blood sugar. I doubled the recipe to make a whole cookie sheet of it so we could share. I used 2 cups shredded mozzarella, 2 cups Parmesan, 2 eggs and 2tsp Italian seasoning. I mixed it all up and spread it on a parchment lined cookie sheet, topped with pepperoni and baked at 350 for 25 min. The whole sheet pan is 24-25 carbs. I’m eating 1/4 of it with a couple spoons of pizza sauce for dipping.

finally bought a mini waffle maker on Black Friday ($10 at Bi-Mart) yesterday and made my own. I thought they were great! My husband is on the fence, still adjusting to the idea of low carb options tasting different than traditional. Added butter and peanut butter for breakfast but may use them as "bread" for ham sandwiches later today. I used:
3 large eggs
1 cup shredded mozzarella cheese
1/4 cup almond flour
1/2 teaspoon baking powder
Mix it up, heat waffle maker and spray with olive oil cooking spray. 1/4 cup batter and cook for 3 minutes.

Chicken Fajitas with cauliflower rice
Big Salad
Roasted asparagus, cucumber, hard boiled eggs and celery for snacks, ham egg "muffins" for breakfast.
Also coming along is homemade ranch and deli meats and cheese for snack!
