Before it became a neighborhood store, Building 6617 stood as part of the U.S. Naval Station in Binictican, a quiet structure surrounded by jungle, service roads, and decades of movement through Subic Bay.

Years later, the space became Uncle Ed’s, one detail remained above the roofline: the shopping cart.

For many, it was simply signage. But for us, it became something more, a reminder that places evolve, yet still carry the weight of where they began.

This National Heritage Month, at High Peak, we’ve always believed coffee is connected to place. Not just where it’s served, but the stories, history, and culture surrounding it. The same way we value origin in coffee — from mountains, farms, and producers — we value the origins of the spaces we inhabit too.

Because craftsmanship doesn’t only begin at the roastery. Sometimes, it begins with preserving memory. 🛒

♣️ Club 3rd Card: Ethiopia ALO Sidama Bona G1
Washed / 74110/ 1900-2300 MASL

Reminds us of: florals, orange, peach, Earl Grey

From Bona, a coffee-growing community in Bensa, Sidama, this lot is shaped by elevation, patience, and generations of farming. At over 2,100 meters above sea level, hundreds of smallholder farmers cultivate coffee on family-owned plots, harvesting cherries by hand before delivering them to the Alo Coffee washing station, where the next chapter of the coffee begins.

Founded by Tamiru Tadesse, one of Ethiopia’s most recognized specialty coffee producers, Alo Coffee has become known for elevating the coffees of Bensa through careful processing and close relationships with surrounding farming communities. The washing station sources cherries from some of the highest coffee-growing areas in Ethiopia, where slow cherry maturation contributes to remarkable sweetness, clarity, and complexity.

The 74110 varietal was originally selected by Ethiopia’s Jimma Agricultural Research Center for its resilience and cup quality. At these elevations, it develops delicate floral aromatics, vibrant citrus character, and a refined tea-like structure.

Using the washed process, the fruit is removed before drying, revealing the transparency of the terroir. What remains is a cup that feels clean and expressive, highlighting the character of the land and the people behind it.

Our Roaster Take:
With this washed Sidama Bona, we approached the roast with intention to preserve a clean, transparent cup, allowing the origin’s delicate characteristics to remain distinct. The medium roast profile highlights soft florals, peach, orange blossom, and a tea-like quality, carried by sugar cane sweetness and finishing with an Earl Grey-like elegance. Our goal was not to add weight, but to let clarity, sweetness, and subtle complexity speak for themselves.

Some stories begin long before we notice them.

Before the coffee, before the work, before the quiet confidence we see today, there was a mother who chose to keep going.

This Mother’s Day at Highpeak, we sat down with Josephine, the mother of our barista Seya.

Since Seya was five years old, Josephine has been raising three daughters on her own. Through years of work, sacrifice, and long days that asked more of her than she thought she could give, she continued to move forward.

In every daughter learning to stand on her own, there is often a mother who carried more than anyone could see.

Today, that strength lives on in Seya. Hardworking, talented, and always striving to grow, she brings the same determination into her craft every day.

Behind every cup she serves is a story of a mother who never stopped trying to build a better life for her children. Some of the strongest love is the kind that keeps showing up, every single day. Happy Mother’s Day. 🧡

♣️ Club 2nd Card: Ethiopia Yirgacheffe Aricha Washed / Kurume / 1900–2300 MASL

Reminds us of: soft florals, lemon, peach, blueberry, honey

In the highlands of Yirgacheffe, Ethiopia, often called the birthplace of coffee, sits the small village of Aricha, where elevation, soil, and tradition come together to produce some of the most expressive cups in the world.

This lot is grown by hundreds of smallholder farmers, each cultivating coffee in backyard-sized plots, often alongside crops like mango, avocado, and enset. Every harvest, ripe cherries are carefully handpicked and delivered to local washing stations, where precision meets heritage.

Using the washed process, the fruit is removed before drying, allowing clarity to shine through the cup, highlighting the region’s signature brightness and elegance.

At elevations reaching up to 2300 meters, the slow maturation of the Kurume varietal develops a refined and layered profile, florals, citrus, and stone fruit, all carried by a clean and vibrant structure. A cup that opens soft and floral, lifts with citrus, and settles into a gentle, honeyed sweetness.
