Made a quick no fuss dessert for tonight: Speculoos Tiramisu (sans alcohol) the kids requested for this dessert.
Ingredients:
14-24 pcs Speculoos biscuits
1/2-3/4 cup coffee
3/4 cup Creme fraiche
3 Tbsp sugar, granulated
1 tsp vanilla extract
Powdered cocoa (for sprinkling)
Procedure:
1. Whip the cream until it becomes lighter (around 2 mins with the hand mixer I used) . Add 1 part sugar, whip for around a minute. Add the 2 parts sugar, whip. Add vanilla. Whip.
2. Dip the Speculoos into the coffee and place 1 biscuit in the bottom. I cut part of it and placed the cut part in the same ramekin then added more from another biscuit. Key is to cover the bottom with speculoos.
3. Drop a Tbsp of whipped cream and smooth out to cover the biscuit layer. Repeat.
4. Top with sprinkled powdered cocoa (I used a strainer with less than 1 tsp of cocoa) and some crumbled Speculoos bits.
5. Enjoy.
Note:
These portions are small since it’s for dinner dessert. You may adjust portions of cream, sugar and biscuits, accordingly. This is not too sweet though.
I made it in less than 30 mins from prep to washing of utensils. Amaretto is optional and maybe added to the brewed coffee for dipping.
