Matcha Bread 🤤 Dough 800g high-gluten flour 200g low-gluten flour 10g yeast 15g matcha powder 150g pure milk 390ml water knead the dough for 10min add butter 20g+12g salt knead the dough for 3min rest the dough for 45min Matcha soufflé filling 100g butter room temperature 80g powdered sugar stir well add 50g egg liquid 140g milk powder 12g matcha powder stir well Method 100g Each pieces roll into a ball and refrigerate for 1 hour, 20g of soufflé filling and roll it up ferment at room temperature for 30 minutes transfer to the refrigerator for 30 minutes, soak in alkaline water 20 sekund 2L water 15g baking soda powder mix well and start cutting sesame seeds on the top Bake at 200 degrees Celsius and 170 degrees Celsius for 12 minutes (the temperature and time should be adjusted according to your own oven) #foryou #bread #Sweet #food #recipes #baking #reels #chef #thessaloniki #greece 31/10/2023
