If you still remember my first Rocky Road cookie before I leveled it up into Rocky Road 2.0… honestly, I still wasn’t fully satisfied with it 🥴

So I went through a few trial-and-error batches because I really wanted that soft, gooey, super moist texture — almost like a moist chocolate cake.

I still maintained my first Rocky Road recipe, but I tweaked and adjusted a few ingredients, especially the cocoa, to achieve the softness and moisture I really wanted

After 3 attempts, I finally got it right. Even the marshmallows melt exactly how I imagined them to — stretchy when you pull them apart, like cheese on pizza 🥹

I used to think Funfetti was the most boring cookie ever because it’s literally just sprinkles 🥲 I had zero motivation to even formulate a dough for it.

But here I am… and I think I finally made a Funfetti version that I actually like.

If you know me, you know I love cookies that are soft, gooey, and melt-in-your-mouth. So I made this one less sweet, extra soft in the center, and intentionally gooey.

And if you think it’s underbaked — it’s not 😭🍪 You can literally see the bottom is fully baked. I made it this way on purpose because I wanted a soft, chewy Funfetti Birthday Cookie instead of the usual dry and cakey ones.

If I’m gonna eat my most hated cookie, it has to be on my own terms 😌

Never thought I’d make a Cookie Monster cookie… because honestly, it was never on my cookie list 😭🍪 Not because it’s blue😅, but because I always found it too corny.

But since Bobbi requested it, here we are 💙

Loaded with Callebaut milk & white Belgian chocolate callets, Chips Ahoy, and Oreos & yes… when I say loaded, it’s REALLY loaded.

Still made it the PUKIES way though — soft, chewy, gooey in the center, and made sure every bite actually tastes like a GOOD cookie.
